L’Espiell is born from the natural elegance and precise simplicity of French bistro cuisine. A style that has always known how to transform the everyday into something memorable. Here, we reinterpret it with our own perspective, drawing inspiration from the essence of Menorca and the sensitivity of our chef, José María Borrás. His approach starts from culinary memory but is expressed with a contemporary vision: dishes that respect what we've learned and seek a constant balance between tradition and modernity, through authentic plates that invite discovering the island.

    The Island as Inspiration

    Menorca is the soul of our table. The sea, the orchards, and the island's artisanal tradition are the starting point for a cuisine that invites discovery through the senses. At L’Espiell, we don't just talk about products; we talk about experience: tasting Menorca in every bite.

    Our menu combines French technique and inspiration, resulting in dishes that reflect a unique identity: Menorca interpreted with contemporary elegance: Tagliatelle tossed in Mahón cheese that blends simplicity and character, crispy rock grouper revealing the purity of the Mediterranean, or roasted Menorcan lobster, treated with the respect an island icon deserves. Each dish is a dialogue between what we were and what we are, between French and Menorcan cuisine.

    The Chef: José María Borrás

    Leading L’Espiell is José María Borrás, born in Menorca and trained in some of the finest kitchens in Spain and France. His career reflects talent, discipline, and a deep connection with the land that raised him. Recognized as the Best Young Chef of Spain and Portugal 2024, Borrás views gastronomy as a constant dialogue between tradition and modernity. In each creation, he imprints the character of Menorca with a sensitivity that transcends the local and becomes a universal experience.
